Hydrating Strawberry Mango Popsicles

I don’t know about you, but here in Utah, it’s been triple digits hot this summer and that can be kind of scary if you are spending the day out in the sun with your kids. We are always sure to bring ice water in our water bottles, we re-apply sunscreen frequently, and rest in the shade when we can. When the kids want popsicles as a treat from all the heat, I feel guilty handing them a cheap, store-bought sugar and/or high fructose corn syrup laden popsicle.


My solution… make my own popsicles! These are made with fresh strawberries and mangoes, and the secret hydrating ingredient……Coconut Water!!! Coconut water is an excellent hydrating drink that replenishes electrolytes, like that of a sports drink, but in a more natural way. So I thought it was the perfect ingredient to add to my popsicles.


Side Note: For me, drinking coconut water plain is an acquired taste, so making these popsicles was a win because of the extra fruit flavors!



Ingredients Needed for Hydrating Strawberry Mango Popsicles

These refreshing homemade popsicles only have 4 ingredients and are easy to whip up!

  • Strawberries – I like to use fresh in season strawberries for the sweetest flavor. If fresh isn’t available, frozen works also.
  • Mangoes – fresh mangoes are so sweet and delicious in this recipe. If mangoes aren’t in season, use frozen inst
  • Coconut Water – this recipe calls for coconut water, not to be confused with coconut milk. It has electrolytes for hydration and a slightly sweet, coconut flavor.
  • Honey – a great sweetener that pairs well with strawberries and mangoes.



You will need a popsicle mold. This is my very favorite popsicle mold. It is silicone and makes it super easy to pop the popsicles out. It comes with reusable sticks, or you can use wooden popsicles sticks.


How to Make Strawberry Mango Popsicles

If you want your popsicles to have a distinct red and orange color, this is the method to make these popsicles:

  • In a blender, puree the strawberries with half of the coconut water. Taste the mixture and blend in honey if the strawberries aren’t very sweet. Pour mixture in a bowl and set aside.
  • Rinse out your blender and then puree the mangoes with the other half of the coconut water. Mangoes are typically very sweet and so you probably won’t need to add honey, but you can if you want to.
  • Alternately pour each fruit mixture (for a marbled look) into popsicle molds and freeze until set, which takes about 6 hours.
